Ham and Tomato Quiche


  • 1 Borgs Country Style Shortcrust Pastry, thawed
  • 1 small white onion, sliced
  • 30g butter
  • 1/2 cup diced ham
  • 2/3 cup cream
  • 2 tablespons grated tasty cheese
  • salt & pepper
  • 2 tablespoons chopped fresh basil
  • 1 large ripe tomato, sliced thickly

  1. Line a 20cm flan tin with removable base with one sheet of pastry. Blind bake pastry case whilst preparing filling.

  2. Melt butter in pan and cook sliced onion until softened. Mix with the ham. 

  3. Beat together cream, eggs, cheese, 1 tablespoon basil, salt and pepper. 

  4. Add to onion and ham mixture and pour into tart case. Place tomato slices on top of mixture. Sprinkle with remaining tablespoon of chopped basil and add ground black pepper.

  5. Bake in a moderate oven 180°C for 25-30 minutes or until filling is set.
